Tartaric Acid

Available in 200g, 400g.

Molecular formula: C4H6O6

Tartaric acid is a white, crystalline organic acid that occurs naturally in fruits, especially grapes, but also in bananas, tamarinds and citrus. The salt (potassium bitartrate) it contains is produced naturally in the fermentation process. It is commonly mixed with sodium bicarbonate and is sold as a baking powder used as a leavening agent in food preparation.

Used in many different applications, including:

  • antioxidant,
  • acidifier,
  • flavour enhancer,
  • stabilizer,
  • masking agent.

Tartaric acid can be immediately recognized by wine drinkers as a source of "wine diamonds," small crystals of potassium bitartrate that sometimes form spontaneously on the cork or bottom of the bottle.

Tartaric acid is used to make silver mirrors, to make soft drinks, to make food tart, to tan hides, and to make blueprints. Tartaric acid is used in tartaric cream (for cooking) and as an emetic (a substance used to induce vomiting).

Tartaric acid and its derivatives have many uses in the pharmaceutical field. For example, it has been used to make effervescent salts in combination with citric acid to improve the taste of oral medications.

Tartaric acid also has several industrial uses. The acid has been observed to chelate metal ions such as calcium and magnesium.
